This ongoing project comprises a whole bunch of years of travelling around the world. I’ve found a north star in the hunt for the best tastes, the best recipes, the best ingredients wherever I go – and most frequently, those are all found in Street Food. These are often generations-old hawker stalls selling the same thing for the last 50, 70 or sometimes over 100 years.

The nature of streetfood is that it is meant to be accessible and convenient for all – and because of it’s ubiquitous success in achieving those things, it crosses class borders. I’ve had the most incredible meals seated on thin plastic stools, sandwiched between doctors and taxi drivers, teens and the elderly. Streetfood represents this beautiful breaking down of barriers, and sharing in something so fundamentally enjoyable, regardless of who you are and where you come from. And I’m completely obsessed with that.

Streetfood is so different from country to country, town to town, even city block to city block. But the one thing that remains the same, the one constant – is the little plastic chairs strewn about on the sidewalk. An icon that screams – great food here.
